First thing that needs to be done is to wrap the now thawed puff pastry around the assembly so that it can be frozen for half an hour or so.
While the Wellington and focaccia bake, the citrus salad needed to be made.We had never done it before, but Saveur’s Winter Citrus Salad with Pistachio-Castelvetrano Olive Relish looked promising. As you can see, it turned out beautifully with blood orange sections surrounding it!
If you come to one of our special dinners, you just might get drafted! Here’s who actually did the salad, Rahel on the left and Helen on the right! They got to be the Garde Mangers in Escoffier’s Brigade System.
